You may need to give your taste buds a chance to adjust to the different flavors working together in the salsa but it tastes really good.

Recipe Ingredients for Halibut with Citrus Salsa

32 oz Halibut fillets (6 pieces)
1 tbsp garlic powder
1 tbsp onion powder
1/2 tsp salt
1/2 tsp fresh ground pepper
1 tbsp lemon juice
1 tsp lemongrass, minced
1 1/2 cup fresh orange juice
1/3 cup soy sauce
2 red bell peppers, diced
2 oranges, peeled and sliced
1/3 cup cucumbers, chopped
2 tbsp fresh parsley, chopped
1 cup onion, chopped
3 tbsp olive oil
1 tbsp garlic, minced
1/2 cup unsweetened apple juice

Recipe Directions for Halibut with Citrus Salsa

  1. Put fish fillets in a flat bottom bowl/container. Season with the garlic powder, onion powder,salt, and pepper. In another bowl, mix the lemon juice, lemongrass, orange juice, and soy sauce. Pour citrus mixture over halibut and let marinate for 30minutes (in refrigerator).

  2. In a separate bowl, mix together the bell peppers, orange pieces, and the cucumbers. Set aside.

  3. When fish is ready, heat a heavy skillet with 2tbsp of olive oil over medium heat. Add the fish and cook until done (flesh is all white). Keep the marinade aside. Remove fish and place in a covered container.

  4. To the hot skillet, add 1tbsp. of olive oil, the onion, garlic, and parsley. Saute until onion is soft. Add about 1 1/2 cups of the leftover marinade with the apple juice and bring to a simmer. Add the bell peppers, orange pieces, and cucumbers. Bring to a boil.

  5. Pour sauce over fish and serve.
