Makes 8 servings



Grandma's recipe 2/3 size. I said it was 8 servings, may be more or less, I'm only going to have a bit. I grew up on this dish and it is teh awesome.

Recipe Ingredients for Halibut with Cheese Sauce

2 lbs halibut
2 cans artichoke
1 c white wine
2 c mushrooms
2 sticks butter
1/2 c flour
3 c milk
8 oz cheddar

Recipe Directions for Halibut with Cheese Sauce

  1. Marinate fish in white wine at least 2 hours. Discard this wine.

  2. Place halibut in large 4 to 6 quart baking dish. Cover fish with artichokes and mushrooms.

  3. Melt butter in 2-quart saucepan. Add flour. Gradually stir in milk and wine. Add seasonings (1/2 tsp. garlic powder, 1/2 T tobasco, 1 tsp salt) Stir in cheese. Cook until cheese melts and sauce is thick. If too thick, thin with cream or wine. Pour sauce over fish and bake at 350 F for 50 minutes in preheated oven.

  4. If Halibut isn't available, use other firm, white fleshed fish, but it will not be as good as the Alaskan halibut.

  5. Grandma's note but true. I wouldn't ever make this without Halibut.
