These are awesome! You can easily make these and freeze them, just don't coat with the panko/parsely mixture; do the coating when you're ready to cook. Serve with a simple salad and veggie!

Recipe Ingredients for Halibut Cakes

4 lbs halibut
1 lb mashed potatoes
2 eggs
4 oz panko bread crumbs, plus more for coating
1/2 T Salt
1 lb mayonnaise
1/2 T pepper
1/4 c lemon juice
1 T garlic
1/4 c Chopped Parsley, plus more for coating

Recipe Directions for Halibut Cakes

  1. Poach Halibut and flake the fish. Once cooled, mix together with all other ingredients. Mix together the extra panko with the extra fresh chopped parsley (about 3 Tbs) and coat the cakes, pressing the crumbs into top, bottom and sides.

  2. When ready to cook, brown in skillet in olive oil, then finish in the oven for 5-7 minutes. Serve with Lemon wedges and Tarter Sauce.

  3. *Substitute steamed mashed parsnips for an even healthier vversion - plus they add a little bite!
