This colorful, fragrant halibut, asparagus, tomato and rosemary dish is perfect for a spring time supper. Serve with some whole grain rice, couscous, or my new favorite, quinoa.

Recipe Ingredients for Halibut with Asparagus, Tomatoes and Rosemary

1 pound of fresh asparagus
1 1/2 cups cherry or grape tomatoes, halved
24 ounces Halibut
1 tbsp extra-virgin olive oil
1 tbsp lemon juice
1 Freshly ground black pepper

Recipe Directions for Halibut with Asparagus, Tomatoes and Rosemary

  1. Preheat oven to 400 degrees. Break woody ends off asparagus and lay stems in dish. Scatter cherry tomato halves on top. Lay rosemary sprigs on top. Place halibut fillets on bed of vegetables.

  2. Combine olive oil and lemon juice and drizzle over halibut. Sprinkle with black pepper.

  3. Roast uncovered for 18-20 minutes, until fish flakes with a fork.

  4. Serve with quinoa, couscous or whole grain rice.
