Braised red cabbage with apples and onions; very easy to make. This recipe from "The Looneyspoons Collection" by Janet and Greta Podleski -- these sisters rock!!

Recipe Ingredients for Hail a Cabbage

2 tsp safflower oil
1 small onion, thinly sliced in rings
1 tsp garlic, minced
1/2 cup apple juice
1 cup apple, peeled and finely chopped
2 tbsp red wine vinegar
1 1/2 tbsp brown sugar
1 g bay leaf
1/2 tsp salt
1/4 tsp black pepper, freshly ground
4 cups red cabbage, shredded
2 tbsp parsley, minced

Recipe Directions for Hail a Cabbage

  1. Heat oil in a large pot over medium heat. Add onions and garlic; cook and stir until onions are tender, about 5 minutes.

  2. Dilute apple juice with 1/2 cup water to make 1 cup total.Add to onions and garlic, along with apples, vinegar, brown sugar, bay leaf, salt, and pepper. Mix well and bring to a boil.

  3. Stir in cabbage. Cover and simmer over medium heat until cabbage is tender-crisp, 7-15 minutes. (This will depend on how thinly shredded your cabbage is, and on how well-done you prefer it).

  4. Remove from heat, discard bay leaf, and stir in parsley.

  5. Raspberry-flavoured red wine vinegar works nicely in this recipe.
