Another healthy fish dish with fresh vegetables. It can be served with fresh garden salads or vegetable purree mixture.

Recipe Ingredients for Haddock Filets in vegetable bed from Olga's Healthy Choice

585 g Haddock
200 g onion
200 g bell peppers
1 tbsp olive oil
1 pinch salt
1 pinch cumin
1 pinch curry
20 g cream
1 tbsp Mustard Seed, Yellow
1 tbsp Heinz Tomato Ketchup
2 tbsp lemon juice

Recipe Directions for Haddock Filets in vegetable bed from Olga's Healthy Choice

  1. In a pan pure oil, warm it up, add sliced onions and fry two minutes. Then add sliced bell peppers and fry them all together for another five minutes. Add salt, cumin and curry, stir properly. Turn the heat on and let it simmer for 10 minutes. Remove the mixture to another cup.

  2. In same pan, pure some salt and pepper and lemon juice. Place the filets. Let them fry slowly in medium heat for about three minutes. Turn off the heat, close the lid of the pan and let it simmer for ten minutes.

  3. Sauce: In a cup mix low fat cream, ketchup, mustard and fresh lemon juice.

  4. Then serve puring some sauce on the filets.
