Haddock with olive and tomato sauce over fennels, onion, pepper and swiss chard

Recipe Ingredients for Haddock with Fennel and Swiss Chard

3 tbsp olive oil
2 cups grape tomato
1 lb haddock
1 bulb fennel
1/2 cup olives
1 yellow onion
1 red pepper
3 tbsp garlic
2 cups swiss chard
1 tsp sea salt
1 tsp black pepper
1 tsp oregano
1 tsp basil
1 tsp thyme
1/4 cup white wine

Recipe Directions for Haddock with Fennel and Swiss Chard

  1. Pre-heat oven to 350

  2. In a small pot add 1 tbsp olive oil and 1 tbsp garlic, heat garlic until you can smell it cooking, add tomatoes, cook until tomatoes are soft and crush the tomatoes. Add white wine, herbs salt and pepper, cook for 5 more minutes. Take off heat, add olives.

  3. Dry fish

  4. Coat baking dish with .5 tbsp olive oil, add haddock fillets, cover with tomato sauce, place in pre-heated oven, bake until done, about 20 minutes.

  5. In a large pan add 1 tbsp olive oil and remaining garlic, heat, add sliced fennel, saute until soft, add onion, saute until slightly brown, add peppers, saute until soft, add swiss chard. May need to add remaining olive oil.

  6. Plate vegetables, serve fish on top
