Recipe Ingredients for H. variation on barefoot Contessa's carrot cupcakes w/ frosting

1 cup sugar
1/2 cup canola oil
2/3 cup apple sauce
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1/2 cup whole wheat flour
2 teaspoons cinnamon
2 teaspoons baking soda
1 1/2 teaspoon salt
3 cups grated carrots
1 cup walnuts, chopped
8 oz cream cheese
1/4 pound unsalted butter
1/2 teaspoon vanilla extract
1/2 pound powdered sugar

Recipe Directions for H. variation on barefoot Contessa's carrot cupcakes w/ frosting

  1. Mix all wet ingredients in mixer

  2. add egg replacer

  3. in separate bowl, combine dry ingredients (not carrots and walnuts)

  4. With mixer running, add half dry ingredients to wet ingredients

  5. Add carrots and walnuts to remaining dry ingredients and mix well

  6. Add to the batter

  7. mix until combined

  8. Fill muffin tins until 3/4 full

  9. Bake at 400 degrees for 10 minutes

  10. Lower temp to 350 and cook for another 35 minutes

  11. Cool on rack.
