A modern make over of a quick traditional jambalaya that has couscous; a food of the Middle-East. Couscous is a good alternative to rice or pasta, and is extra flavorful when cooked in chicken or beef broth. Instead of salt and pepper I use regional Cajun seasoning; Slap Your Mama, and add to taste.

Recipe Ingredients for H.C.'s Modified Chicken and Sausage Couscous Jambalaya

1 1/2 pounds boneless skinless chicken breast, cut into small strips
1/2 teaspoon salt
1/2 teaspoon pepper
5 ounces sausage, reduced-fat, cut into slices, (Oscar Mayer Turkey Smoked Sausage)
1 onion, chopped
1 green pepper, chopped
1 tablespoon minced garlic
2 cups fat-free low-sodium chicken broth
1/2 cup tomatoes, chopped
2 basil leaves
1 1/2 cups couscous

Recipe Directions for H.C.'s Modified Chicken and Sausage Couscous Jambalaya

  1. Season the chicken with salt and pepper (if using - or seasoning blend mentioned above) in a large nonstick saucepan coated with nonstick cooking spray, cook the chicken and sausage over medium heat for about 4 minutes, stirring constantly.

  2. Add the onion, green pepper, and garlic and cook for 5 minutes or until tender. Add the chicken broth, tomatoes, and bay leaves and bring to a boil. Stir in the couscoous, cover, and remove from heat. Let sit for 5 minutes or until the liquid is absorbed. Fluff with a fork and season with seasoning (if using) Remove bay leaves before serving.
