Gypsy Soup Recipe

A hearty winter soup, made in crockpot and easily frozen. Great with a hearty Italian or soda bread. Substitute any orange or root vegetables for the carrots (sweet potato is fantastic). Also good with red potato instead of turnip. The spices may not be to everyone's liking, so reduce the amount of cinnamon and paprika if you aren't a fan - use a bay leaf or marjoram to make up the difference. And be warned, this makes a LOT of soup.

Recipe Ingredients for Gypsy soup

2 cups chopped yellow onion
1 small chopped turnip
2 cloves garlic
2 cups diced carrots
2 teaspoons paprika
1 teaspoon ground turmeric
1 teaspoon oregano
1/2 teaspoon ground cinnamon
1 pinch salt
1/2 teaspoon thyme
4 cups stock, vegetable
1 cup beef stock
2 cup red wine
2 tablespoon soy sauce
3/4 cup chopped bell peppers
2 cups chopped cabbage
5 links Italian sausage

Recipe Directions for Gypsy soup

  1. Cook sausage on stovetop until cooked through, using water or olive oil in the pan to keep it from sticking

  2. Add everything to the crockpot

  3. Cook on low for 8 hours

  4. Decant into freezer-safe containers
