Cajun inspired 15 bean soup. Most of these ingredients were added because they were laying around the house. That's what's great about soups, you can add any scraps you like. Makes about 3-4 qts of soup. Approximately 14 1-cup servings. (We added things to the ingredients list such as chicken, etc.)

Recipe Ingredients for Guy's Cajun Inspired Soup

6 1/2 oz Smoked Sausage
8 cup Cajun 15 Bean Soup
1 medium raw Onion Red
8 oz Tomatillos
1 3/4 cup Tomatoes
3 oz Beef, Top Sirloin
1 medium Carrots
1 medium raw Bell Pepper Red
1 medium Yellow Hothouse Bell Pepper
2 stalk, large (11"-12" long) Celery
2 green onions
1/2 oz Habanero Chile
5 pepper Pepper, Serrano
4 oz Home-Style Fresh Salsa
4 clove Garlic
2 tbsp Lemon Juice, Canned Or Bottled
1 1/2 cups cooked chicken
3 1/2 serving naturals whole kernel sweet corn

Recipe Directions for Guy's Cajun Inspired Soup

  1. We found a bag of Cajun 15 bean soup at Wal-Mart. It has the bean mixture and a seasoning package.

  2. Soak Beans in 2 qts water overnight covered.

  3. After soaking, remove water, rinse, and add 2 qts fresh water. Bring water to boil then reduce heat and simmer uncovered for 2 1/2 hours.

  4. In a skillet, saute onions, meat, peppers, garlic until meat is browned. Drain excess grease and add all ingredients to soup and simmer for another 30 minutes.
