Homemade gumbo recipe --not authentic!

Recipe Ingredients for Gumbo & Greens

2 T sunflower oil
1 lb andouille sausage, sliced
3 cloves garlic, chopped
1 cup scallions, chopped, green & white parts
1 cup onion, chopped
1 cup sweet bell pepper, chopped
3 stalks celery, sliced
1 lb mustard greens, washed, trimmed & chopped
4 cups okra, sliced
28 oz tomatoes, canned
4 cups broth, ham or chicken

Recipe Directions for Gumbo & Greens

  1. Spray a heavy Dutch oven with cooking spray. Saute the sausage over medium high heat for 3 minutes until browned.

  2. Remove and set aside on paper towels to drain.

  3. Spray the pan again, and add the garlic. Saute for 30 seconds to 1 minute. Add the scallions and saute another 2 minutes. Add the onion and peppers and saute another 2 minutes. Add the celery, and saute another 2-3 minutes.

  4. Add the mustard greens to the hot vegetables and stir constantly until greens are wilted.

  5. Add the okra, tomatoes and sausage. Bring to a boil. Lower heat and simmer covered for 25 minutes.

  6. Serve over rice or as a soup/stew.
