Recipe Ingredients for Gumbo with Chicken, Sausage & Shrimp

1 large Onions
150 grams Green Bell Pepper
30 pieces Carrots Baby Cut
3 stalk, medium (7-1/2" - 8" long) Celery
16 oz Boneless Skinless Chicken Breasts
1 tbsp Vegetable Oil, Canola
2 tbsp Butter
4 oz Pork Sausage, Fresh
2 cup Diced Tomatoes
16 oz Chicken Broth
1 tsp Garlic Powder
2 grams Bay Leaves
1 tsp Parsley, Dried
0.5 tsp Cumin
2 dash Pepper, Black
8 oz Shrimp, Mixed Species
1/4 cup White Whole Wheat Flour
0.25 cup Lime Juice
1 oz Worcestershire Sauce
1 tsp Hot Sauce Louisiana
0.13 cup Coriander Leaves
1 tsp Chili Powder
2 tsp packed Sugars, Brown

Recipe Directions for Gumbo with Chicken, Sausage & Shrimp

  1. Cut chicken into pieces and marinade in Worcestershire sauce, hot sauce, lime juice, and chili powder for at least 2 hours.

  2. Dice vegetables and add to large stew pot on medium high heat with canola oil.

  3. Add the sausage.

  4. When vegetables are just browned and sweated, add remaining seasonings, tomatoes, and chicken.

  5. Stir, then add chicken broth.

  6. Combine butter and flour to form rue.

  7. Stir rue into stew.

  8. Simmer for at least 35 minutes.

  9. Add shrimp about 10 minutes before serving.

  10. Serve over dirty rice.
