A quick gumbo I whipped up out of stuff I had laying around to get rid of extra white rice I had made.

Recipe Ingredients for Gumbo ala Tom

4 cups cooked white rice
3 oz ground beef 80%
2 cups spinach
1 cup Garbanzo Beans
7 oz Canned Pink crab meat
1/2 cup flour
2 cups water
1 tbsp white pepper
1 tbsp garlic powder
1 tbsp chili powder
1 tbsp onion flakes

Recipe Directions for Gumbo ala Tom

  1. Broil or fry your chopped meat; break it into crumbles

  2. While chopped meat is cooking, put 2 cups of water on to boil, add spinach and spices

  3. When the water gets hot, take a cup of it and blend in the flour--stirring until it is dissolved; pour back into spinach

  4. Add garbanzos and chopped meat crumbles to mix.

  5. Stir rice into blend and add extra water as needed to keep ingredients well blended. You can put in a little cooking spray to keep things from sticking.

  6. Stir and reduce heat; let simmer for 20 minutes or so.

  7. Serves 4.
