Guinness and Molasses Bread Recipe

This recipe is taken from Paul Hollywood's 100 Great Breads. It was modified to use just 1 tsp salt instead of the 1 Tbsp salt that was called for in the original recipe.

Recipe Ingredients for Guinness and Molasses Bread

2 cups whole wheat flour
1 cup bread flour
1 tsp salt
1 oz. yeast
2 T molasses
2/3 cup Guinness stout
1/2 cup water

Recipe Directions for Guinness and Molasses Bread

  1. Mix all ingredients together. (we used the water to soften the yeast before mixing all ingredients together.) We used the bread hook on a Kitchen Aid mixer and beat for 2 or 3 minutes until all was blended.

  2. Remove the bread from the bowl and put it onto a floured board. Knead for 5 minutes.

  3. Put back into the bowl and let rise for 1 hour. It will double in bulk.

  4. Empty the dough from the bowl onto a floured board. Shape into a ball. Flatten and roll up into a loaf shape.

  5. Line a pan with parchment paper. Place the loaf on the pan and allow to rise for an hour.

  6. Heat oven to 400 degrees. Bake for 30 minutes. Remove from oven and cool on a wire rack.
