This makes one loaf of richly flavored, light bread. It is a recipe from Paul Hollywood's 100 Great Breads.

Recipe Ingredients for Guinness and Molasses Bread

2 cups whole wheat flour
1 cup bread flour
1 oz. yeast
1 T salt
2 T molasses
2/3 cup Guinness stout
1/2 cup water

Recipe Directions for Guinness and Molasses Bread

  1. Mix all ingredients together. (we used the water to soften the yeast, though the directions did not say to do so.)

  2. We mixed the dough with a bread hook on a kitchen aid mixer. The directions just say "mix all ingredients together.)

  3. Tip dough out onto a lightly floured board. Knead for 5 minutes. Put dough back in the bowl. Let set for one hour in a warm place.

  4. Line a baking sheet with parchment paper. Tip the dough out onto a floured counter. Flatten and roll out. Roll up and shape into a loaf. Put it on the baking sheet.

  5. Let rise for one hour.

  6. Heat oven to 400 degrees. Cut three slashes across the loaf.

  7. Bake for 30 minutes. Transfer to a rack to cool.
