Thinly sliced baked onion rings are very tasty. My husband who hates low cal said they tasted great. They are reminiscent of thinly sliced beer battered fried onion rings without the guilt!

Recipe Ingredients for Guiltless onion rings

1 cup Corn Puffs
1/4 white onion
1 egg

Recipe Directions for Guiltless onion rings

  1. Blend corn puffs (arrowhead mills are low cal about 60K per serving) until it is a fine powder. Mix Cajun spice, garlic powder, pepper, and/or salt to enhance flavor.

  2. Thinly slice onion in mandolin to 1/4 inch slices.

  3. Whip egg in bowl

  4. Dip onions in egg white then coat with corn puff "bread" crumbs.

  5. Bake in oven for 10 to 15 min at 375 to 400 degrees.

  6. Voila!
