Healthy version of the banana bread made from whole wheat and fresh fruit, with no added fat and a boost of protein from soy!

Recipe Ingredients for guilt free whole wheat blueberry banana bread

1 1/2 cups whole wheat flour
1/2 cup soy flour
1/2 cup sugar
1/2 tsp salt
3/4 tsp baking soda
3/4 tsp baking powder
1/2 cup unsweetened apple sauce
1/2 cup 1% milk
3 large bananas
1 cup fresh blueberries
1 tsp vanilla extract

Recipe Directions for guilt free whole wheat blueberry banana bread

  1. Preheat oven to 350 degrees. Spray muffin pan.

  2. Mix all dry ingredients.

  3. In a separate bowl, mash bananas and add sugar, milk, vanilla extract, and apple sauce.

  4. Gently add dry ingredients to the mashed banana, mixing until they are just moistened.

  5. Fold in blueberries. Pour in to muffin pan.

  6. Bake for 20 minutes or until toothpick inserted in the middle comes out clean

  7. Serve warm with ice cream.
