Modified from a "Libby's" recipe I found online, these little mouthfuls are only 90 calories and have less than one gram of fat a piece. You'll need foil baking cups for this one. Enjoy!

Recipe Ingredients for Guilt-Free umpkin Tartlets

3/4 cups sugar
1 tbsp cornstarch
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt
2 large egg whites
15 oz pumpkin puree
12 oz fat free evaporated milk
8 oz fat free cool whip

Recipe Directions for Guilt-Free umpkin Tartlets

  1. Preheat oven to 350 degrees.

  2. Spray the foil baking cups with cooking spray and place them on a baking sheet.

  3. Combine the sugar and spices in a small bowl.

  4. Beat the egg whites in a large bowl.

  5. Add the pumpkin and the sugar-and-spice mixture to the egg whites and stir.

  6. Slowly stir in the evaporated milk.

  7. Add 1/4 to 1/3 cup of the mixture into each baking cup.

  8. Bake for 25 to 28 minutes or until a toothpick inserted in the center comes out clean.

  9. Cool on a baking sheet for 20 minutes.

  10. Refrigerate for at least 1 hour.

  11. Top with cool whip and (if desired) a sprinkle of nutmeg and cinnamon.
