guacamole and veggies to go with the quesadillas

Recipe Ingredients for guacamole and veggies

1 ripe avocado
2 plum tomatoes, chopped
2 scallions, thinly sliced
1 jalapeno pepper, seeded and minced
1 T. fresh lime juice
1/2 t. salt
30 baby carrots
3 celery stalks, cut in 1/2 width then 4 inch lengths
1 cucumber, cut into appetizer sticks
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 green bell pepper, sliced

Recipe Directions for guacamole and veggies

  1. cut the avocado in half and discard the pit. Scrpe the avocado pulp into a small bowl; coarsely mash with a fork. Add the tomatoes, scallions, jalapeno pepper, lime juice, and salt; mix until just combined. Scrape into a serving dish and serve at once.

  2. slice celery stalks, cucumber, and peppers into 1 inch by 4 inch sticks. serve vegetable with the guacamole.
