Chuncky salad made with avocados, tomatoes, peppers & black beans

Recipe Ingredients for Guacamole Salad

1 pint grape tomatoes, halved
1 yellow bell pepper, seeded & diced
15 ounce black beans
1/2 cup red onion, diced
1 tbsp minced jalapeno pepper
1/2 tsp freshly grated lime zest
1/8 cup freshly squeezed lime juice
1/8 cup olive oil
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp minced garlic
1/4 tsp cayenne pepper
2 avocados, seeded, peeled & diced

Recipe Directions for Guacamole Salad

  1. Place the tomatoes, yellow pepper, black beans, red onion, jalapeno pepper and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, black pepper, garlic and cayenne pepper and pour over the vegtables. Toss well.

  2. Just before serving, fold the avocados into the salad
