Recipe Ingredients for GSG Southwest Quinoa

2 cups quinoa
4 cups water
28 oz black beans, drained
4 medium tomatoes, diced
8 green onions, chopped (including most of green part)
1 cup fresh cilantro, chopped
1 heaping teaspoon lime zest, grated
1/4 cup fresh lime juice
6 tablespoons extra virgin olive oil
1 tablespoon maple syrup
1 teaspoon sea salt
1/2 teaspoon ground pepper

Recipe Directions for GSG Southwest Quinoa

Whisk together dressing ingredients in a bowl. Soak quinoa for a few minutes and rinse well. Simmer it in the water uncovered about 10 min. Turn off heat, cover, let stand 10 min. Strain any excess water. Add quinoa to dressing and toss well then stir in remaining ingredients.
