G's Veggie Gumbo Recipe

You can use ground turkey or lean ground beef. The recipe is one serving, but obviously you can make it with 1-2 lbs. of meat and more veggies for your family.

Recipe Ingredients for G's Veggie Gumbo

1/2 cup turkey
1/4 cup brown rice
1/2 cup diced tomato
1/4 cup tomato sauce
1/4 cup zucchini
1/4 cup onion
1/4 cup green pepper
1 T worcestershire sauce
1 T salt and pepper

Recipe Directions for G's Veggie Gumbo

  1. Brown the ground turkey (or beef) in skillet with onions

  2. Add other ingredients and boil for 10-15 minutes or until rice is tender

  3. Add cheese, if preferred.
