Gruyere Frittata Recipe

This frittata uses less fat than many recipes. It's good with a salad and bread if you wish.

Recipe Ingredients for Gruyere frittata

8 egg whites
6 egg yolks
1 large onion
1 bell pepper
4 oz. gruyere cheese
2 tbsp olive oil
1 tsp salt

Recipe Directions for Gruyere frittata

  1. Slice pepper and onion thinly and saute on high heat in an ovenproof saucepan with the olive oil for a few minutes, stirring now and then to prevent over-browning. Turn heat down to low and stir occasionally while you prepare the other items.

  2. Preheat oven to 350 F.

  3. Grate the cheese coarsely and set aside.

  4. Crack eggs into a bowl, separating out two of the yolks. Whisk with about 1/4 cup water (for lighter texture) and salt until eggs are light in color and well blended.

  5. When onions are translucent (about 20-30 minutes), give eggs another 10-12 strokes with the whisk and then pour them over the onions and pepper. Distribute grated cheese over the top evenly. Place in oven.

  6. Bake until a toothpick inserted in the center comes out clean (about 30 mins).
