Ground Turkey, Spinach & Sweet Potato Stirfry

Recipe Ingredients for Ground Turkey, Spinach & Sweet Potato Stirfry

800 grams sweet potatoes
900 grams ground turkey
1 tbsp canola oil
1 cup chopped onions
1 tsp tarragon
1 cup chicken stock
2 tbsp Dijon mustard
2 tbsp soy sauce
8 cups baby spinach

Recipe Directions for Ground Turkey, Spinach & Sweet Potato Stirfry

  1. Heat in oil in skillet over medium heat.

  2. Add onions and saute for 1 min.

  3. Add sweet potatoes and saute for 3 mins longer, or until they start to soften.

  4. Stir in ground turkey/chicken and tarragon. Continue to saute, stirring to break up ground meat until it loses its pinkness (about 4 min)

  5. Season with salt and pepper.

  6. Add stock, mustard & soy sauce. Bring to boil and reduce heat to simmer.

  7. Cook, covered, for 20 min or until sweet potatoes and chicken are cooked through.

  8. Uncover, add spinach, and cook another 1 minute or until spinach is wilted.

  9. If sauce is too thin, reduce it for another 1 or 2 min.

  10. Season with salt & pepper to taste. Serve over rice or pasta.
