A healthy stew-type meal that can be eaten all on it's own

Recipe Ingredients for Ground Turkey Slop

16 oz ground turkey, 93/7 lean
8 oz tomato sauce, any flavor but no salt added
1 zucchini, medium, sliced
1 squash, medium, sliced
1 onion, small sliced into thin strips
14 1/2 oz diced tomatoes
8 oz portabella mushrooms, baby, sliced
2 teaspoons minced garlic

Recipe Directions for Ground Turkey Slop

  1. In a large skillet sprayed with non-stick spray, brown the ground turkey and drain.

  2. Meanwhile, in another pan, saute the onion with a tsp. of garlic on medium heat until it begins to soften, 3-5 mins.

  3. Add the zucchini and squash, and saute another 3 mins or so.

  4. Add the sliced baby bellas (you can also use crimini mushrooms if you'd like) and saute another 3-4 mins.

  5. Add all veggies to the browned turkey, along with the tomato sauce, diced tomatoes, remaining garlic, and salt & pepper if desired. Bring to a slight boil, reduced to medium low-low and simmer for 20-30 mins.

  6. Makes 4-5 healthy servings (you can sprinkle each serving with fat free grated parmesan on top if desired).
