A delicious African-inspired peanut soup!

Recipe Ingredients for Ground Nut Chop

1 tbsp canola oil
2 cloves garlic
1 onion
796 ml tomatoes
2 cups yams
3 tbsp Peanut Butter
300 g spinach
1 tbsp cayenne pepper
1 tbsp ginger (fresh grated is best)
1 tsp cardamom
2 tbsp peanuts, chopped

Recipe Directions for Ground Nut Chop

  1. heat oil in pan

  2. add onion and cook until tender

  3. add tomatoes and spices, heat to boil

  4. add yams, boil until they are al dente

  5. take a small amount of broth and mix together with peanut butter into kind of a roux and add it

  6. stir thoroughly

  7. add one package frozen spinach

  8. Serve alone or over rice.
