This hearty chili is so yummy! My family loves it. Also great as a vegetarian recipe, sans the chicken.

Recipe Ingredients for Ground Chicken Chili

2 tbsp Olive Oil
1/2 cup Onion, chopped fine
1 jalapeno pepper, chopped fine
1/2 cup green peppers
2 cloves of garlic, minced
1 lb ground chicken
1 1/2 cups tomato sauce
2 cups black beans, cooked
1 cup brown rice
1 1/2 tsp cayenne pepper
1 dash of salt
1/2 tsp pepper
1/4 cup cilantro, fresh, chopped

Recipe Directions for Ground Chicken Chili

  1. Cook brown rice in 2 1/2 cups of water.

  2. Meanwhile, pour olive oil into a deep skillet w/a lid. Add onion, jalapeno, green pepper and garlic. Sautee until onion becomes clear.

  3. Add ground chicken, break up meat as you put it in pot and after with wooden spoon. Lightly brown meat.

  4. Add beans and tomato sauce all at once. Stir and simmer for 15 minutes, adding water as needed.
