Slow cooked ground beef and veggies served over polenta.

Recipe Ingredients for Ground Beef and Polenta Ragout

1 lb ground beef
1/2 onion, chopped
2 carrots, peeled and chopped
1 celery stalk, chopped
1 zucchini, chopped
2 cloves garlic
1/2 cup low sodium beef broth
16 oz canned chopped tomatoes
1 cup yellow corn meal polenta
1 tbsp butter

Recipe Directions for Ground Beef and Polenta Ragout

  1. Brown ground beef. Add veggies and beef broth to slow cooker (minus zucchini). Cook on slow for 8 hours.

  2. With 30 minutes left add zucchini.

  3. Prepare corn meal/polenta according to package.

  4. Add butter when done.

  5. Serve ground beef ragout over polenta.
