Recipe Ingredients for ground beef enchiladas

1 pound lean ground beef
1 onion
6 ounces enchilada sauce
12 ounces bush's black beans
2 cups shredded cheddar cheese
9 flour tortillas
1 tbsp cumin
3 tbsp green bell pepper

Recipe Directions for ground beef enchiladas

  1. Saute ground beef and onion. Drain any fat. Pour 3/4 can enchilada sauce into meat, add spice and bell pepper.

  2. Simmer for about 1/2 hour, or longer. Coat tortillas with enchilada sauce. Place meat mixture into tortilla, top with shredded cheese, roll and place on plate. Microwave for about a minute, until cheese melts. Serve with salad, and spanish rice.
