Recipe Ingredients for Ground Beef with Butternut Squash

1/2 pounds of ground beef
1 tsp vegetable oil
1 cup butternut squash, cubed
1/4 cup onion, diced
1/4 cup bell pepper, diced
1 clove garlic, minced
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cayenne pepper

Recipe Directions for Ground Beef with Butternut Squash

  1. Bake or microwave the squash until fork-tender.

  2. Sweat the onion and garlic in heated oil.

  3. Add the ground beef and brown.

  4. Add the peppers and sautee until tender.

  5. Add water (or beef broth if desired) as necessary.

  6. Add the spices and squash and stir.

  7. Continue to cook until liquid is gone, about 3 minutes.
