A quick egg dish to make ahead and heat in am as I run out the door. I eat this between the Arnold Thin Sandwich (1 pt on Weight Watchers) and out I go. Good way to get protein, and veggies into your diet!

Recipe Ingredients for Groganzola & Sundried Tomato Egg Frittata

16 oz egg beaters
1 1/2 cup ham, diced
1 cup sun dried tomatoes
1 cup broccoli
1 cup zucchini
1 cup yellow squash
1/2 cup Gorgonzola cheese
1/2 cup cheddar cheese

Recipe Directions for Groganzola & Sundried Tomato Egg Frittata

Mix all ingredients in a bowl and then place into a backing dish at 375 for approx. 30 minutes (until slightly brown on top). Toothpick to check if it's done.
