Vegies with buckwheat groats and mushrooms

Recipe Ingredients for Groat Vegetable Soup

2 tablespoons olive oil
1/2 onion
2 cloves garlic
5 carrots
12 stalks celery
470 grams potato
67 grams shiitake mushrooms
3 ounces cremini mushrooms
1/2 cup buckwheat groats
1 cup vegetable broth
280 grams broccoli

Recipe Directions for Groat Vegetable Soup

  1. Sautee onion and garlic in oil.

  2. Add raw buckwheat groats and sautee on medium-high heat for 3-5 minutes.

  3. Chop all vegetables.

  4. Add carrots, celery and potato and cook 5 minutes.

  5. Add mushrooms.

  6. Add broth and 7-10 cups of water.

  7. Bring to boil Lower to simmer. After 5 minutes, add broccoli. Add 1 tsp of thyme. Add soy sauce to taste. (1-2 Tbsp).

  8. When serving add a tsp of nutritional yeast to the bowl.
