Easy, quick, tasty, healthy, and only 30 calories for one whole nutrient-rich, high-fiber zucchini. And those hatch marks from the grill are so pretty.

Recipe Ingredients for Grilled Zucchini

3 medium zucchini, cut lengthwise down the middle
1 tablespoon olive oil
1 teaspoon oregano
2 garlic cloves, minced
1/4 teaspoon rosemary
1/4 tsp salt
1 pepper to taste

Recipe Directions for Grilled Zucchini

  1. Preheat grill.

  2. Mix olive oil, oregano, garlic, rosemary, salt and pepper.

  3. Brush (or rub with your hands) the zucchini with the olive oil mix.

  4. Grill until zucchini is tender, about 4 minutes per side.
