Easy Grilled Zucchini and Eggplant

Recipe Ingredients for Grilled Zucchini and Eggplant

1 large Squash, Summer, Zucchini, Includes Skin
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
0.25 cup Olive Oil
0.13 cup (8 fl oz) Water
1 tbsp, ground Basil, Dried
0.25 tablespoon Oregano
1 dash Pepper, Black

Recipe Directions for Grilled Zucchini and Eggplant

Mix olive oil, basil, oregano and pepper in food processor or blender until pureed. Brush on sliced zucchini or eggplant. Grill until hot, 15-20 minutes, turning every 3-5 minutes and brushing with oil mixture.
