Recipe Ingredients for Grilled zucchini with chilli goat's cheese

4 medium courgettes
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp red chili ( large)
1 clove garlic
1 cup mint leaves
150 g goat cheese

Recipe Directions for Grilled zucchini with chilli goat's cheese

  1. Marinate zucchini for 30 minutes with oil, garlic, chilli, lemon juice

  2. Char grill zucchini on nonstick grill, pour marinade over. Remove zucchini and add mint and seasonings. Crumble cheese over and serve.
