Fresh lake trout grilled to perfection

Recipe Ingredients for Grilled whole trout

16 oz Trout, Rainbow, Wild
2 oz Hickory Smoked Bacon
1 tbsp Olive Oil
1 fruit without seeds Lemons
1 tbsp Rosemary, Fresh
1 tsp Thyme, Fresh

Recipe Directions for Grilled whole trout

clean and butterflay trout ( I remove the head but not necessary if you prefer them truely whole), lightly salt and pepper the inside and drizzle a small amount of olive oil into cavity. arrange herbs and lemon slices. Close cavity and wrap the fish with 4 slices of bacon. Drizzle outside of fish with olive oil to prevent sticking. Place on clean grill rack also brushed with olive oil before heating. Grill should be very hot (435 degrees) before putting fish on. Grill on each side for 10 minutes per side. Your spatula should only touch the fish twice. Once when you are turning and once when you remove from grill to plate... in other words... leave it alone while it is cooking.
