Eggplant onions and peppers, oh my!

Recipe Ingredients for Grilled Veggies

1 cup, cubes Eggplant
210 grams Peppers, Sweet, Green
210 grams Vidalia Onion
2 tbsp Olive Oil

Recipe Directions for Grilled Veggies

  1. Slice eggplant, cut peppers into chunks, slice onion.

  2. Brush with olive oil and a pinch of season salt. Sprinkle with Italian seasonings.

  3. Grill on George Forman Grill until veggies are brown and soft.
