Recipe Ingredients for Grilled Veggies

2 eggplant, sliced
2 zuchini, sliced
2 squash, sliced
1 onion, sliced
4 carrots, sliced
1 poblano pepper, sliced
1 green pepper, sliced
1 red pepper, sliced

Recipe Directions for Grilled Veggies

  1. Fire up a grill with your favorite hardwood, or use propane.

  2. Marinade all the veggies in an herb vinaigrette of your choice. When the grill is ready, cook the veggies til tender. Add a little salt and pepper, and Enjoy!

  3. (When slicing the carrots, make sure you slice them the long way, so they don't fall through the grill).
