Grilled vegetables for focaccia bread or Italian rolls or served as a panini.

Recipe Ingredients for Grilled Veggie Sandwich

1/4 c light mayonaise
3 cloves garlic, minced
1 T lemon juice
1/8 c olive oil
1 c sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1/2 c crumbled feta cheese
1 c mushrooms

Recipe Directions for Grilled Veggie Sandwich

  1. Mix mayonaise, cloves and lemon juice.

  2. Grill or saute or broil vegetables in olive oil.

  3. Top with mayonaise mixture, combine with focaccia bread and bake in oven for 20 minutes.

  4. Top with feta cheese and and serve.
