Recipe Ingredients for Grilled Veggie Pizza

2 mushrooms, portobello caps,medium, sliced
1 small red onion, sliced into rounds
1 yellow squash, small, sliced
1 T. olive oil
2 plum tomatoes, thinly sliced
1/2 cup mozzarella cheese, smoked
1/4 c. fresh basil leaves, sliced

Recipe Directions for Grilled Veggie Pizza

  1. Preheat grill on medium.

  2. Brush mushrooms, onions, and squash with oil.

  3. Sprinkle with 1/4 t. each salt and pepper.

  4. Grill vegetables covered for 6 minutes or until tender, turning once.

  5. Remove from grill and separate onion rings and set aside.

  6. Reduce heat on grill to medium low.

  7. Cover large cookie sheet with foil and spray with cooking spray.

  8. Stretch dough into 10"X14" rectangle.

  9. Place on cookie sheet.

  10. Lift dough and foil; place dough side down on grill gently peeling off foil. Cover and cook 3 minutes or until bottom is crisp. Turn crust over.

  11. Quickly top with tomatoes, vegetables, and cheese.

  12. Cover and cook 2 minutes longer or until bottom is crisp. SLide onto cutting board; garnish with basil.
