Recipe Ingredients for grilled veggie & cheese sandwiches

6 oz kalamata bread
2 cups portabella mushrooms
1 large red pepper
1 small red onion
246 g artichoke hearts
1 tbsp olive oil
5 oz smoked gouda

Recipe Directions for grilled veggie & cheese sandwiches

  1. saute 2 chopped portabella mushrooms, 1 sliced red pepper, 1/2 cup chopped red onion, 6 sliced artichoke hearts in olive oil. add rosemary, black pepper.

  2. top bread with veggie mixture and cheese. spray pan with cooking spray and grill until cheese is melted
