Wonderful, very "meatlike" low fat, low calorie burgers that will fool you into thinking you're cheating!!

Recipe Ingredients for Grilled Veggie Burgers

2 teaspoons olive oil
1 small onion, grated
2 cloves garlic, crushed
2 carrots, shredded
1 small zucchini, shredded
1 small squash, shredded
1 1/2 cups oatmeal
1 egg, beaten
1 tablespoon soy sauce
2 tablespoons whole wheat flour

Recipe Directions for Grilled Veggie Burgers

  1. Cook onion and garlic for 2 minutes, add other vegetables and cook for 3 more minutes. Remove from pan, and mix in egg, oats, and soy sauce. Refrigerate for 1 hour.

  2. Form into eight patties, dip into whole wheat flour to coat, and cook over hot grill about 5 - 6 minutes per side.

  3. 1 cup of mushrooms is optional, and adds to the meatlike consistency. Old Bay seasoning is good too, and 1/4 cheddar cheese is also an option. About 200 calories for two slices of whole wheat bread, olive oil mayonaisse, and lettuce. (I use Nature's Own light wheat...it's great!) Enjoy burgers again with no guilt at ALL!!
