Quick to grill; can change up vegetables. Great with grilled polenta.

Recipe Ingredients for *Grilled Vegetables

3 zuchinni, sliced 1" thick
3 yellow squash, sliced 1" thick
2 large onions, peeled and quartered
2 sweet bell peppers, any color, seeded and quartered
1 lb mushrooms
1 tablespoon olive oil (*use 1/3 cup in recipe)
1 tablespoon balsamic vinegar (*use 1/3 cup in recipe)
1 tablespoon water (*use 1/3 cup in recipe)
1 teaspoon oregano
3/4 teaspoon minced garlic
1/4 teaspoon ground black pepper
1 dash sea salt, freshly ground

Recipe Directions for *Grilled Vegetables

  1. *Use measurements in parenthesis; ingredients are reduced as about 1/2 of marinade will be discarded.

  2. Wash and prepare vegetables. Place in a gallon size freezer bag. Wisk remaining ingredients together, and add to ziplock bag. Seal and flip bag around several times. Allow to marinate for several hours, turning occasionally to recoat with vinaigrette. Preheat grill to medium. Place vegetables on grill, turning once and basting with remaining marinade, until firm but cooked.
