Easy to prepare side dish that goes well with grilled pork chops

Recipe Ingredients for Grilled vegetables and potato

2 zucchini
1 squash
1/2 lbs potato, peeled
1 red bell pepper
1/2 large onion
2 tbls olive oil

Recipe Directions for Grilled vegetables and potato

  1. Slice zucchini and squash into thick slices

  2. Cut potato into large chunks

  3. Quarter the red bell papper

  4. Quarter the onion

  5. Sprinkle with sea salt and cracked black pepper

  6. Toss all with herb olive oil

  7. Roast at 400 for about 20-25 minutes until potatoes are tender crispy
