Grilled vegetables rolled in a flour tortilla

Recipe Ingredients for Grilled Vegetable Wrap

1 flour tortilla, 12 inch
1 slice onion
1/4 cup green pepper, sliced
1/4 cup red or yellow bell pepper, sliced
1/4 cup zucchini, sliced
1/4 cup yellow squash, sliced
3 tablespoons fat free Italian Dressing
2 slices fresh tomato
1/4 cup shredded lettuce

Recipe Directions for Grilled Vegetable Wrap

  1. Lay vegetables on a baking sheet or large plate. Brush with dressing. Grill vegetables until tender and starting to blacken. Remove from grill and arrange on the flour tortilla. Place tomato slices and shredded lettuce on top of the vegetables. Gently roll tortilla into a wrap. Serve immediately.

  2. Note: Vegetables such as carrots, eggplant, etc., may be substituted. As an alternative to grilling, vegetables can also be cooked in a 450 degree oven for 10-15 minutes, or until tender and beginning to blacken.
