A quick and healthy pasta salad for the family

Recipe Ingredients for Grilled Vegetable Pasta Salad

7 oz chicken breast
1 med red bell pepper
1/2 lb asparagus spears
4 oz mushrooms
1/2 cup fresh basil leaves
6 oz (2 cups) uncooked whole wheat pasta
1/4 cup Parmesan cheese

Recipe Directions for Grilled Vegetable Pasta Salad

  1. Slice chicken lengthwise into 1/2 inch slices. Brush chicken and vegetables with 1/4 cup dressing, set aside.

  2. Meanwhile, cook pasta according to package directions, drain and keep warm.

  3. Place chicken and vegetables in frying pan on medium heat. Cook mushrooms for 5-7 min and bell peppers, squash, asparagus, and chicken 10-12 min, turning occasionally, then remove from heat.

  4. Cut vegetables and chicken into bite-sized pieces; place in large bowl. Add pasta, basil and remaining dressing; mix gently. Grate Parmesan cheese over salad, toss gently. Serve warm or at room temp.
