cut carrot ,zucchine and summer aquash into 1/8 strips red onion thinly sliced french bread 1 inch thick

Recipe Ingredients for grilled vegetable panini

1/4 cup mayonaise
2 tsp tarragon vinegar
1/2 tsp dried tarragon
1 tsp sugar
1 dash pepper
1 carrot
1 small zucchini
1 squash
1 small red onion
1/4 cup olive oil
1/4 cup tarragon vinegar
1 salt and pepper to taste
4 slices french bread

Recipe Directions for grilled vegetable panini

  1. in bowl combine mayonaise,tarragon vinegar,dried tarragon and refrigate.placed sliced vegetables

  2. in zip lock bag. with salt and pepper.

  3. in a bowl mix 1/4 cup olive oil and 1/4 cup tarragon vinegar.

  4. put half of mixture in bag.set aside a few minutes

  5. to marinate

  6. place vegetableson grill and cook till tender

  7. spread each slice of bread with tarragon mayonaise then form sandwiches with grilled vegetables

  8. grill again for 1-2 mins
