Not so traditional New Orleans sandwich

Recipe Ingredients for Grilled Vegetable Muffuletta

1/2 cups olives, green drained and slightly crushed
1/2 cups kalamata olives, drained and pitted
1/2 cups extra virgin olive oil
1/2 cup cauliflower, pickled and drained
2 celery stalks, sliced
2 medium carrots, peeled and thinly sliced
1/2 cup peppers, pepperocini, drained and chopped
1/3 cup cocktail onions, drained
8 cloves garlic, minced
1 1/2 teaspoons Italian seasoning
3/4 teaspoon crushed red pepper flakes
1/4 teaspoon freshly ground black pepper
1/4 teaspoon celery seeds
10 oz whole grain bread, cut 1/2 horizontally
1 zucchini, large sliced horizontally and grilled
2 large mushrooms, portabella sliced and grilled
2 roasted red peppers, sliced
2 tomatoes, sliced
10 slices fresh mozzarella cheese
8 basil leaves
1 tablespoon balsamic vinegar

Recipe Directions for Grilled Vegetable Muffuletta

  1. Start by making the olive salad.

  2. Combine all ingredients in a large nonreactive bowl and mix well. Place in fridge 24 hours before using on sandwich. Next assemble sandwich. Cut bread loaf horizontally. Layer cheese and vegetables one at a time. Next layer basil leaves then fresh tomato. Spread olive salad lightly on top of tomatoes. Drizzle with balsamic vinegar. Place loaf top on sandwich and press down. Cut into 4 servings and serve.
