Recipe Ingredients for Grilled Vegetable Medley

1 red bell pepper
1 green bell pepper
2 zucchini
2 yellow squash
2 cups button mushrooms
4 green onions
1 tsp thyme
1 tsp basil
1/2 tsp garlic powder
1/4 tsp mustard powder
1/8 tsp black pepper

Recipe Directions for Grilled Vegetable Medley

  1. Cut peppers into 1/4 inch strips and squash into 1/4 inch slices. Slice mushrooms. Arrange all on a large sheet (20 x 14 inch) of heavy duty aluminum foil.

  2. evenly sprihnkly remaining ingredients over vegetables. Fold up ends of foil and make a sealed packet by crimping the edges. Leave room for heat to circulate.

  3. Grill on uncovered grill over medium coals for 20-25 minutes. Remove from grill and let stand, open, 5 minutes before serving.
